Moroccan Split Pea Soup
(serves 4-6)
Ingredients:
80g butter
150g onions
700g yellow split peas (soaked weight not dried weight)
25g finely chopped garlic
10g ground coriander
10g paprika
5g chilli powder
1litre of vegetable stock
Method:
1. If using dried peas soak overnight.
2. Finely chop garlic
and onions
3. Sweat the onion and
garlic in the butter.
4. Add coriander, paprika
and chilli and cook for 2 minutes
5. Add the drained
split peas and stir well
6. Add the stock, bring to the boil and simmer
until the peas are completely soft.
7. Liquidize the mixture
8. Taste and season
